Egg and Olive Sandwiches Recipe

EGG AND OLIVE SANDWICHES

6          Boiled eggs, minced
1 tsp.   Salt (Placed in boiling water, eggs will be easier to peel)
1-4oz. Can of chopped black olives
3-4 T.  Miracle whip
Dash   Salt to taste

Cover eggs with water and add 1 teaspoon of salt to boil.  After eggs reach the boiling point, boil eggs covered for 5 minutes. Drain immediately and run cold water over eggs until comfortable to handle to peel.  Approximately 2 minutes.  After peeling, mince eggs and place in a bowl.  Add olives and miracle whip and salt.  Stir well.  May be served as regular sandwiches or cut crust off of bread, then cut sandwiches in fours to make finger sandwiches.  Serve as an appetizer.

This recipe is a favorite of Chuck and Susie’s

Note:  This one is for you Susie!  We just talked about these not too long ago.
Mom had these listed as Appetizers, but I've added it to sandwiches as well.

I Just Love Netflix

I love watching movies.  I hate paying big bucks to watch them.  Going to the movies can be fun, but I'd rather just stay at home in my jammies.  That's just one reason I love Netflix.  It's the best money we spend every month.  We actually save money.  We cut our cable back to just the basics.  The kids watch Netflix through our Wii.  Bud and I watch on our computers too.  Of course, I have to warn you.  It's addictive.  I've watched a number of TV series.  It's great to watch the episodes one right after the other.  I can watch on my laptop after the kids go to bed.  In fact, I better get them fed so they can get ready for bed.  I feel like watching a good mystery....

South Beach Diet Supercharged

I recently made a visit to my new cardiologist.  I just love him!  He's helped me way more than my old cardiologist ever did.  I'm feeling better and stronger every day.  Among his advice for me was to get the book South Beach Diet and read it.  This is the diet he says comes the closest to the lifestyle he recommends living.  So I took the plunge and downloaded the book South Beach Diet Supercharged to iBooks on my iPhone.  This is perfect timing for me since we are starting our Pound for Pound Challenge at work on Tuesday, February 1.  I'll post more about the Pound for Pound Challenge later.

So Tuesday is the day.  I've decided to take the first step towards making permanent and lasting lifestyle changes.  I'm excited about this.  I'm ready for a healthier life.  One in which I can keep up with the kids!  I've been cleaning out the cabinets of foods that will tempt me back into the old way of life.  I've made a grocery list and Bud's gone to the store for me (he's so good about that!  I'm a lucky woman!) I'm ready for Tuesday.

I'll be blogging my progress.  In addition to continuing to post recipes from Mom's cook book, Cooking with Mom, I'll be posting recipes that are for the South Beach Diet.  If you're living the South Beach way, share your recipes too.  I'm sure I'll be on the hunt for more as time goes on.  I want to get the South Beach Diet Super Quick Cookbook and the South Beach Diet Quick and Easy Cookbook, but that we have to wait for now.  My birthday is coming up, maybe I'll get it then!

I finally remembered to take a picture of the finished product:

OK, so I actually forgot to take the picture until it was almost totally finished.  It's half gone!

Maybe next time I'll remember to take the picture before we eat half of it.  It's just so good, I couldn't wait!

Michael Buble Concert

Crazy Love!
Crazy Love
I recently had the good fortune to attend a Michael Buble Crazy Love Concert.

 It was TOTALLY AWESOME.
It was like a comedic act and concert in one.

He sang all my favorite songs, (Everything, Haven't Met You Yet, Hollywood and Feeling Good) so it was perfect.  Well, almost all my favorite songs.  I would have like to hear him sing Sway.  Maybe next time?

One of the best things about the concert was spending time with friends and family.

As an added bonus, we got to see a vocal play group called Naturally 7.

Wall of Sound

They were very awesome too!

Here's one place where you can find
Naturally 7

Organize Your Lunch

I'm in a little bit of a panic.  My two little munchkins will be starting pre-k this coming year!  I've been agonizing over what to do about lunch.  Send lunch with them?  Have them eat in the school cafeteria?  What's the going thing right now?
So, I've been looking online for lunch box ideas.  I want to be ready.  I love the "bento" style of lunch boxes.  But for me, they must be kid friendly.  These lunch boxes make fixing lunch a snap.  I love all the lunch ideas they include on the web site at http://www.easylunchboxes.com/.  Someday, I'll see about adding a video of the kids using these...You know, in my spare time...

Sick, Sick, Sick and Sick again!

OK, so if you can't tell by the title, we've all been sick!  We've all had the flu and strep.  Went to the doctor on Friday and the kids got a clean bill of health (along with 4 immunization shots!).  Now the daycare calls and Alex has a fever.  When will it ever end???  Just when I thought things were getting back to normal.  Oh well.  We will just have to try and hang on until the spring.

I'm off to go disinfect something....or everything.... again.

Clothing Organization for Twins

This weekend I'm starting the new year off right.  I've washed, sorted and put away all the kids clothes.  I've pulled out everything that's too small for them or will be when summer comes around again.  I put anything too big and for summer into the storage bins under their bunk beds (Thanks Sally and Richard!)

Savannah has decided she likes dresses.  (After previously insisting that she hated dresses.)  I've had to buy dresses and leggings (because of the season) and I'm eliminating most of her jeans.  She's so skinny that most jeans won't fit her very well anyway.  They're either too long, to big around or too short.  I've ended up with 2 pair that she'll wear IF she's wearing the right shirt.  I'm worried I have a fashion diva on my hands.  She insists on wearing her boots with everything!!! (So, I bought her more boots! :).  I think I'd wear boots if I could find some that fit and had good support and affordable, but that's a different post altogether!).

Clothes are grouped together as outfits and folded or hung together.  I let the kids pick out, from the drawer, what they want to wear to go to daycare.  That way there's less trouble in them getting out of bed and dressed.

Shoes are stored in the shoe bin under the bunk bed steps.  Bedtime books are stored on the recessed step of the bunk bed.

Boots (sans the ones they currently have on and the pair outside that needs to be cleaned) are stored along the wall under the desk.

How long do you think it will all last?  Hopefully until the next laundry day.  We shall see!

Fresh Sugar Lemon Soap

Fresh Soap, Sugar Lemon 7 oz (200 g)

No, it's not to eat.  I love this Sugar Lemon soap!  It's the best thing ever!  I haven't tried the other Fresh products.  I don't know if I'll be able to.  I imagine they're just as good as the Lemon Sugar, but I love the Lemon Sugar so much, I don't want to try anything else.  If I do, I'll let you know!
